Christmas Morning Breakfast #MadeWithChobani


Who else looks forward to Christmas morning breakfast?



I know I do!  Opening up all those presents works up an appetite. ;)

 
  
One of my all-time favorite breakfast meals is blueberry waffles {or pancakes} with bacon.  Delish!


Drenched in butter and swimming in maple syrup, along with the smell of bacon cooking on the stove, doesn't get much better than that.

Be sure to remember to play Christmas music in the background!






 What makes these waffles better you may ask?  Well, since these waffles are #MadeWithChobani  that makes them much fluffier than your typical waffle.  If you have never tried their yogurt, you are really missing out.  It tastes amazing!  You can see more delicious recipes that are made with Chobani yogurt here.



Ingredients

1 cup all purpose flour {I used gluten free}

1/2 tsp baking powder

1/2 tsp baking soda

2 tbsp granulated sugar

1 tsp lemon zest {lemon juice works too}

3/4 cup Chobani Plain Greek Yogurt

6 tbsp any kind of milk {see note}

1 egg

1/2 tsp vanilla extract 

1 cup fresh blueberries


Instructions

In a small bowl, combine the flour, baking powder, baking soda, sugar, and lemon zest.  Set aside.

In a large bowl, whisk yogurt and milk together.  Then add the egg and vanilla extract.  Mix until smooth.

Combine the wet and dry ingredients.  Fold in the blueberries.

Heat a frying pan over medium/low heat; spray with oil.  You will need to watch the pancakes to make sure they don't burn.  I would recommend cooking for about 2 mins on one side then 1 min on the other.

Drizzle with maple syrup, shower with powdered sugar or top with cool whip, and enjoy!

Notes

The batter will be thick, so you will need to flatten your pancake with the back of a spoon.

If the batter is too thick {like mine was} you will need to add more milk one tbsp at a time.
